My idea of the perfect, home-cooked weekend brunch is something quick & easy that’s big on taste… something you can whip up even in the most tired or hung-over of states.

Here’s a really simple French toast recipe inspired by a staple I usually have at The Breakfast Club that ticks all the boxes and takes barely 20 minutes to fix up. Fried, eggy bread… crispy, savoury streaky bacon… all complemented by the rich sweetness of bananas and honey. Just waking up to the glorious aromas of cinnamon and nutmeg toasting away in butter is a dream in itself…

Ingredients (serves 3 – 4)
  • 1 Brioche loaf (cut into thick ~2cm ish slices)
  • 2 Bananas, cut into bite-sized pieces
  • 1 pack of Streaky Bacon (~12 slices)
  • Large knob of Butter
  • Vegetable / Olive Oil
  • Honey (or Maple Syrup if you prefer)
For the Batter:
  • 3 Eggs
  • 1 cup (~250ml) of Milk
  • 1 tsp ground Cinnamon
  • generous pinch of ground Nutmeg
  • 1 teaspoon Vanilla extract
  1. Pre-heat the oven to 190°C (170°C fan-assisted). Bake the streaky bacon on an oven-proof tray for 15 minutes, pouring off any excess fat at the end. If you really want to crisp the bacon up, bake it on a wire-rack, remembering to put an oven tray underneath to catch the excess, rendered fat as the bacon cooks away.
  2. Combine all the batter ingredients in a large bowl and beat until the eggs, milk, vanilla extract and spices are thoroughly mixed through
  3. Heat up a large frying pan on a medium-to-high heat and grease it with a tablespoon of oil and a small knob of butter
  4. Dunk the brioche slices in the batter, ensuring both sides soak up the eggy-milky mixture then fry 2 or 3 slices at a time until golden brown on each side
  5. Transfer the fried toast to a large platter lined with kitchen towel to soak up any excess grease and repeat steps 3 and 4 until you’ve fried off the whole Brioche loaf (or however many slices you fancy)
  6. Assemble and plate up! – I’d suggest 3 slices of toast, 3 strips of bacon and 5-6 pieces of banana per serving, all topped off with a good drizzle of honey to taste.

Tip: Wash it all down with a good ‘ol Bloody Mary (devilishly spiked with plenty of Vodka and a good hit of Tabasco + Worcestershire of course…)
